I grew up in the '90s, so I was indoctrinated with pudding cups that rhyme with "hello," in my lunch and at birthday parties. With ancestry hailing from the Caribbean and grandmothers who babysat me, I didn’t grow up with homemade pudding—just the store-bought stuff; so it was all I knew.
As I’ve gotten older, I crave the recipes of my youth. However, the ingredients in some of my favourite nostalgic foods are less than desirable; but upon closer inspection and with reference to the past, most of our favourite throwback recipes actually started out as recipes “with benefits”
Egg yolk pudding is exactly what I imagine a grandmother would make, with a focus on whole food ingredients. And when it comes to sweet recipes that don’t spike blood sugar, this is perfect.
Egg yolks help stabilize blood sugar by providing healthy fats and essential nutrients, which slow glucose absorption and improve insulin sensitivity. This means a dessert based on egg yolk will satisfy your sweet tooth and help you achieve your health goals.
Thank you. I make this pudding all the time, and I never tire of it!
A lovely simple custard like pudding. This looks like real comfort food!! I love how you set out the recipe too. Very easy to read.
